- 3.5 oz smoked scamorza (thinly sliced)
- 3.5 oz speck
- 2 potatoes
- to taste breadcrumbs

Preparation of the Savory Potato Tart
If you don’t want to buy the puff pastry and want to make it yourself, follow my recipe found here otherwise let’s move on to the next step:
Wash and peel the potatoes, then using a large-hole grater, grate them and let them rest in a bowl to lose all their vegetable water.
Roll out the puff pastry, then cover it first with slices of speck and then with slices of smoked scamorza. Now take the potatoes and squeeze them well until they have eliminated all their water.
Season the potatoes with a drizzle of oil, some salt, and plenty of grated Parmesan, then place them on top of the cheese and spread them to cover the entire tart.
Sprinkle with plenty of breadcrumbs, grated Parmesan, drizzle with oil, and bake at 356°F for about 15-18 minutes. Bake on the middle shelf of the oven to ensure even cooking in the oven and also for the potatoes on top, which should be golden and crispy.
An extra tip:
* If you don’t like smoked scamorza, you can replace it with sweet scamorza or a cheese like galbanone or chopped pizza mozzarella;
* Instead of speck, you can use salami, cooked ham, or any deli meat you prefer;
* The savory potato tart can be stored in the fridge, wrapped in aluminum foil, for up to two days.
