Ingredients for the Super Soft Pizza with Bubbles

The ingredients listed are to prepare a pizza as large as the standard oven tray. If you want it a bit thinner, you can set aside a portion of the dough to make a small focaccia.

  • 4.5 cups all-purpose flour
  • 9 oz potatoes, unpeeled, cooked, boiled
  • 0.7 oz salt
  • 1.4 cups water
  • 0.6 oz fresh brewer's yeast
  • 1 tsp honey
  • 5 tbsps extra virgin olive oil
  • 1 cup tomato sauce
  • 14 oz mozzarella

Preparation of the Super Soft Pizza with Bubbles

The first step is to prepare the dough. The characteristic of this pizza is its extreme softness, thanks to the presence of potatoes in the dough. First, boil them in plenty of unsalted water, or cook them in the microwave at 800W for 13 minutes (in a microwave-safe bowl covered with food-safe plastic wrap).

  • This recipe can be prepared by kneading with a stand mixer or by hand. The procedure is the same; if you knead by hand, it will take a few more minutes, but the result will be equally amazing!

  • In the bowl of the stand mixer, place the mashed potatoes, passed through a ricer, along with the flour. Begin mixing with the paddle attachment. Add the water in which the yeast and the teaspoon of honey have been dissolved. Continue mixing to obtain a very soft dough. Now add the salt and finally the tablespoons of oil one at a time until fully incorporated.

  • Continue kneading for about 10 minutes until you achieve a smooth, sticky dough. Let it rest well-covered in a lightly oiled bowl for about 2 hours or until doubled in size.

  • Once the dough has doubled in size, transfer it to a baking sheet lined with parchment paper and lightly oiled (this will make it easier to spread the dough). Using oiled hands, gently spread the dough until it covers the entire baking tray.

  • Cover with a clean cloth and let it rest for about an hour in a warm place. Meanwhile, cut the mozzarella into cubes and let it drain to remove excess milk.

  • Once the pizza has finished the second resting period, top it with the tomato sauce previously seasoned with oil and salt. Add the mozzarella, then plenty of oregano, and place in the oven at 428°F on the middle rack.

  • Bake for about 20 minutes, keeping an eye on the cooking time, as it may vary depending on your oven’s characteristics. Then take it out of the oven and let it rest for a few moments before serving.
