SUPER SOFT ZEBRA CAKE How many of you like donuts? I make them in large quantities at home, I like to enjoy them for breakfast or after a meal, and since they are prepared in just a few minutes with a few steps, it also becomes an opportunity to let my girls play in the kitchen. The zebra cake that I present to you today is as soft as few others, those who have been following me for some time know that I have made many with many ingredients, but today’s is perhaps the softest ever, even though it doesn’t have butter among the ingredients! Ingredients for a super soft zebra cake of 10 inches

  • 4 egg whites
  • 3/4 cup sugar
  • 1/3 cup milk
  • 1/3 cup sunflower oil
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • to taste unsweetened cocoa powder
  • 4 egg yolks
  • 3/4 cup sugar
  • 1/3 cup milk
  • 1/3 cup sunflower oil
  • 3/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract

  • 1 Mixer

Preparation of the super soft zebra cake

As you will read, the preparation of this cake is extremely quick, I recommend preparing two bowls in which we will prepare the two batters, so we are immediately ready to insert them into the pan according to the instructions I will give you during the recipe. The only precaution you need to have is to use eggs at room temperature, this way the mixture we are going to prepare will swell immediately and the cake will be even softer!

  • Separate the yolks from the whites and place them in two bowls, then add the sugar and beat both mixtures until the yolk batter is fluffy and the whites are stiffly beaten.

  • Once the batters are well beaten, start with the egg whites by adding, continuing to beat with the help of an electric mixer like this one, first the oil, then the milk and finally the sifted flour and baking powder. You can add the vanilla flavoring along with the milk and oil, in my case I didn’t have it and didn’t add it, and I assure you I didn’t miss it at all!

  • Once the flour and baking powder are also incorporated, set the batter aside and move on to the one with the yolks.

  • Take the bowl in which you beat the yolks with the sugar, and continuing to beat, add (just as we did with the previous batter) the milk, oil, vanilla extract, and when they are perfectly incorporated, add the sifted flour and baking powder, and after incorporating them, set aside.

  • Now take a bundt pan, pour a little oil and with the help of a paper towel, grease the entire pan, then pour a little flour and cover the entire pan, removing the excess flour.

  • Now start to prepare the layered cake: pour half of the yellow batter (the one with the yolks) at the bottom of the pan, now sprinkle the entire surface with sifted unsweetened cocoa powder, take the white batter (the egg whites) and pour half of it on the cocoa powder.

  • Sprinkle the entire surface of the batter again with unsweetened cocoa powder and cover with the remaining half of the yellow batter, another sprinkle of unsweetened cocoa powder across the surface, and finally cover with the last portion of white batter.

  • Bake the super soft zebra cake at 350°F for about 30 minutes, but times may vary depending on your oven, I always recommend doing the skewer test, after about 20 minutes, insert a skewer and if it comes out dry, the cake will be ready to be taken out of the oven, otherwise we will need to continue baking.

  • Wait for the cake to cool slightly, then we can unmold it by turning it over onto a serving plate and enjoy our cake in all its soft goodness!

    You can replace the sunflower oil with melted butter, but decrease the amount by 20% compared to the indicated oil amount, so you can use 60 g of cold melted butter.
