Apple and Cinnamon Pinwheels

It’s always difficult to make a treat that’s easy, indulgent and also light, but with these apple and cinnamon pinwheels you can’t go wrong. They’re tasty and very quick to make, especially because I used ready-made puff pastry. They’re also vegan — just be sure to buy a 100% plant-based puff pastry.

As always, the important thing is to measure quantities well, so if you follow my instructions and use the puff pastry as shown, each treat will contain only a little and the final result will be apple and cinnamon pinwheels with very few Weight Watchers points.

The filling shouldn’t be too caloric either, so I made it with fruit. The best fruit is the kind that doesn’t release too much liquid during baking, so I used apples with the ever-present cinnamon. Let’s make them…

Ingredients

  • 1 roll puff pastry (plant-based, read the Notes for more information)
  • 3 apples
  • 1 1/2 tbsp brown sugar
  • to taste lemon juice
  • 3 tsp ground cinnamon
  • 2 tbsp plant-based milk
  • 1 tsp confectioners' sugar
  • Points per pinwheel = 1.6 WW points
  • Points for 2 pinwheels = 3 WW points

Steps

  • Wash, peel and core the 3 apples, grate them and season with lemon juice, sugar and cinnamon. Mix well.

  • Roll out the puff pastry and spread the apples over it.

  • Distribute the apples evenly to the edges, leaving just a little empty space on one of the long edges, as shown in the photos.

  • Start rolling the pastry along the long side, trying to create a “plump” roll that is even along the whole length and tightly rolled, without leaving gaps inside.

  • Once rolled, wrap it in its paper, place it on a tray and put it in the freezer for about half an hour so it firms up.

  • If it’s too long to fit in the freezer you can cut it in half, being very careful to make a clean cut because it’s still very soft.

  • Once cold, remove it from the paper and you’ll see it will be easy to cut it into 20 slices about 3/4 in each with a well-sharpened knife.

  • Arrange the pinwheels on a baking sheet lined with parchment paper and brush with the plant-based milk over and on the edges of each pinwheel.

  • Bake in a preheated oven at 392°F for 15-20 minutes, until the apple pinwheels are nicely golden. Then let them cool on the baking sheet otherwise they will be too damp to remove from the parchment paper: this step is very important. Once the tray is cool, gently lift the pinwheels with a spatula.

  • The apple and cinnamon pinwheels are ready and if you like you can dust them with a little confectioners’ sugar, mainly for looks.

  • And for the Christmas table you can arrange them on a large white plate in the shape of a little tree and then decorate as I did — cute, right?

    But above all delicious and indulgent! At my house 20 pinwheels lasted 15 minutes, can you believe it? They were unanimously approved by the whole family and I only managed to grab two, so they must be made again! Now it’s your turn — I look forward to your comments and photos.
