This broccoli and kale soup was born from having these vegetables at home and needing to prepare a warm dish for dinner. Initially, I thought of making a side dish and then came up with the idea of preparing this soup…
So in the end, I made a soup: and it turned out great! It became very creamy thanks to the light cheese like Philadelphia and it has a nice delicate flavor. And the color is beautiful, a nice green that I hope can be seen from the photos.
For this recipe you can use either light cream cheese from cow’s milk or, alternatively, now there is also vegan Philadelphia and both provide a good amount of protein. So just add some bread or, as I did, some toast cut into croutons and dinner is served! The recipe is very simple, let’s see how I did it…

Ingredients
- 21 oz broccoli
- 7 oz kale
- 1 onion (or even 2 shallots)
- 3 tsps extra virgin olive oil
- 3 1/2 cups water (approximately)
- 2 tsps granulated bouillon (or use vegetable broth directly)
- 1/3 cup light cream cheese (or vegan Philadelphia)
- to taste salt and pepper
- Portion points with light Philadelphia = 3 WW points
- Portion points with vegan Philadelphia = 4 WW points
Steps
First, clean the vegetables well by removing the hard parts. I don’t throw away the broccoli stalks: I remove the tough outer part and save the softer inner part. Cut broccoli and kale leaves into pieces and slice the onion.
Sauté the onion in a teaspoon of oil for a minute, then add the broccoli, water, and granulated bouillon (or directly the vegetable broth). Let it cook for 5 minutes and then add the kale and continue cooking for another 15 minutes.
When the vegetables are tender, turn off the heat and blend everything well with an immersion blender. Add the cream cheese and mix so that it combines well. If necessary, add salt and, if you like, pepper.
And here the broccoli and kale soup is ready to be served at the table, just add 1 teaspoon of good oil to each plate!
It’s really delicious just like this, but if you prepare some croutons, it will be even more so. Just toast some slices of bread and then cut them into cubes. Remember: the Weight Watchers Propoints for the croutons must be counted separately! I look forward to your comments…
