Easy Bread with 1 g Yeast in the Air Fryer

Today I present my latest experiment with the air fryer: the easy bread with only 1 gram of active dry yeast! I’m so satisfied you can’t imagine. Baking bread is already a great pleasure for me, but making one that even a child can prepare makes me truly happy! And it’s also vegan, what more could you want?

The recipe is similar to this one: Whole wheat bread in the air fryer, but there are differences in the flour used, in the processing and in the baking. You can certainly also make it in a traditional oven, but I’ll let you discover at what temperature and in how much time.

Making this bread is really very convenient: just mix the ingredients in the evening and let the dough rise directly in the air fryer basket. In the morning, after about 12 hours, turn on the fryer and in less than 1 hour your bread is ready to be taken out!

So the work is reduced to the minimum because there’s no need to knead, the rise is long and happens while you sleep, the baking is easy and precise in the air fryer and the result is a well-risen, substantial, soft and very very tasty bread. Let’s see how I did it!

Ingredients

  • 2 1/2 cups whole wheat flour
  • 1 2/3 cups durum wheat flour
  • 1 tbsp re-milled durum semolina
  • 1 1/8 tsp fine salt (a little more than 1 teaspoon)
  • 1 1/3 cups water (at room temperature)
  • 1/3 tsp active dry yeast (about 1/3 teaspoon)
  • 1 tsp whole cane sugar (about 1 teaspoon)
  • 1 tbsp + 1 tsp extra virgin olive oil (1 tablespoon and 1 teaspoon (measuring spoons))
  • Whole loaf (about 800 g / 1.76 lb) = 55 WW points
  • 10 g (~0.35 oz) = 0.7 WW points (so less than 1 WW point!)

Preparation

You can mix either with a stand mixer or by hand; the important thing is that all the ingredients are well combined but there’s no need to roll out the dough on the work surface. So to mix, use either the stand mixer bowl or a large bowl. Prepare the dough in the evening and in the morning you’ll be able to bake the bread.

  • To begin, prepare a piece of parchment paper the size of your air fryer basket. Alternatively use one of those parchment liners made for air fryers. Insert it into the basket and sprinkle a little semolina to dust the parchment and the walls of the basket. Leave a little semolina for later. If you don’t have semolina, use whole wheat flour; that’s fine too.

  • Mix the soft wheat flour and the whole wheat flour together with the salt directly in the stand mixer bowl or in the bowl you’ll use for mixing.

  • In another container, mix the yeast, sugar and water so the yeast dissolves.

  • If you use the stand mixer, use the dough hook; otherwise proceed manually with a wooden spoon. Pour all the water with dissolved sugar and yeast and the oil over the flour. Mix just long enough to obtain a well-hydrated dough. If necessary, use a bit more water.

  • Place the dough in the air fryer basket and dust it with the remaining semolina. Cover with a tea towel and keep the basket in a closed place. I put it in the oven with a rack underneath so it stays straight, but this depends a lot on the model of air fryer; I’m sure you’ll find the right solution for your basket.

  • You can go to sleep and wait for the next morning. After about 12 hours the dough will have more than doubled. I did it twice and the first time it had even filled the whole basket; it turned out a square loaf indeed: too bad I didn’t take photos the first time…

  • Put the basket back into the air fryer and bake at 293°F for 45 minutes. At the end, check that the bottom is not too moist; if it is, turn it over and bake for another 2 minutes. Once out of the fryer, cool on a rack and resist the aroma: warm is good but piping hot is not!

Storage

This bread stays good for 4 days in a paper bag. It never lasted longer for me. You can also, once cooled, slice it and freeze the slices separated by a piece of parchment paper. Thaw at room temperature and you’ll have bread like it was just baked.

  • Can I bake it in the oven?
