Here’s how to make delicious eggless cookies, light, vegan and very easy to make with only 3 ingredients. They’re super simple to prepare and even easier to eat, so be careful not to dive in too fast!
This recipe comes directly from the English Weight Watchers: you usually can’t go wrong with their recipes. You can flavor them as you like, but even without adding any flavoring they’re delicious.
And shall we talk about the smell that fills the whole kitchen? Way better than packaged cookies, they all smell the same. Enough chatter — I’ll show you how to make them.

Ingredients
- 2/3 cup flour (can also be whole wheat)
- 3 1/2 tbsp vegan butter (light)
- 2 tbsp sugar (can also use brown sugar)
- to taste flavoring for desserts as desired (optional)
- Total points = 15 WW points
- Points for 1 cookie = 1 WW point (1.25)
- Points for 2 cookies = 2.5 WW points
- Points for 3 cookies = 4 WW points (3.75)
- Points for 4 cookies = 5 WW points

Steps
First, prepare all the ingredients and weigh them carefully.
Cream the butter and sugar together, then add the flour and, if you like, a few drops of dessert flavoring.
Make a dough ball, wrap it in plastic wrap and leave it in the fridge for half an hour.
Take the dough back and proceed in one of the following two ways:
– You can divide the dough into 12 equal portions and flatten them with your fingers, giving the cookies a more irregular shape.
– I rolled the dough very thin with a rolling pin on a sheet of parchment paper and then used a cookie cutter about 2 3/4 in to cut out 11 cookies. I made the twelfth cookie with the dough scraps.Place the cookies on a baking sheet lined with parchment paper and bake in a preheated oven at 356°F for about 15-20 minutes.
Be careful: the cookies should be only slightly golden.
Place them on a rack and let them cool completely.

They’re perfect for breakfast and for a wholesome snack for you or your children. They’re also great with fruit and yogurt. With two cookies you’ll spend only 2 WW points.
I found them delicious, but there’s a risk you’ll want one after another and another. So you’ll need some self-control — and if there’s no one at home to help you finish them, divide them into portions immediately and put them in airtight bags so they’re less accessible.
My suggestion is to save them for the afternoon snack, for yourself or to offer to friends for a nice tea time. A couple of cookies each with a small cup of chocolate sauce, the Dutch vla, and what a treat. Who’s thinking about diets?
