Finally I was able to try making gratinated radicchio… yes, because in the Netherlands it’s hard to find radicchio, unfortunately I’ve rarely seen it and usually only the round kind. Now this one won’t be the Trevigiano radicchio, I couldn’t hope for that, but at least it’s the oblong-shaped one that lends itself better to making this recipe!
I’ve never tasted it like this, so when I saw it at the supermarket — apparently because at Christmas they stock many more exotic and imported foods here — I immediately bought it. Here it’s called roodlof and it almost looks like Belgian endive, which here is called witloof, but if I translate roodlof I get radicchio. So radicchio it is! But I think it would also be good with endive…
Enough of my usual chatter: it turned out delicious!!! And it couldn’t be easier: it takes 5 minutes to prepare and 10 to 15 minutes to cook. It was much appreciated here; here’s how I did it…

Ingredients
- 4 heads radicchio (if they are large only 2 will be enough)
- 1 1/3 tbsp breadcrumbs
- 2 tsp extra virgin olive oil (measuring teaspoons)
- to taste salt
- Points per serving = 2 WW points
Tools
- Cutting board
- Knife
- Small bowl
- Brush
- Baking tray
- Parchment paper
Preparation
Wash the heads of radicchio and dry them. If they are small, cutting them in half will be enough; otherwise cut into 4 wedges. I don’t remove the hard core because the leaves might come apart; you can discard it when eating.
Place the radicchio wedges cut-side up on a baking tray lined with parchment paper, brush the wedges well with the oil, add a little salt and sprinkle the breadcrumbs pressing them with your fingers so they adhere well.
Preheat the oven to 437°F (conventional) or 392°F (fan). Bake and let cook for 10 to 15 minutes until the surface is nicely golden. Remove from the oven and serve. But they’re also good once cooled…
Our gratinated radicchio is ready to be served at the table! Really delicious…
