I love shrimp cooked in a skillet in just a few minutes and dressed with plenty of lemon. Unfortunately here in the Netherlands I don’t easily find fresh fish, at least not in the area where I live. So when I go to Italy for vacation one of the first things I do is stock up on seafood and cook a few new recipes for the blog, just like this one.
These pan-fried shrimp are extremely quick to bring to the table — they only take a few minutes and are perfect for a special occasion, a celebration, Christmas or Valentine’s Day, for example. Let’s make them now.

Ingredients
- 9 oz shrimp (or large prawns (king prawns))
- 1 clove garlic
- 2 teaspoons extra virgin olive oil
- 1 lemon
- 1 bunch parsley
- to taste salt and pepper
- Total points = 8 WW points
- Points per serving = 4 WW points
Steps
Here is my supermarket haul in Italy: 4 beautiful fresh Argentine prawns.
Wash the shrimp well and pat them dry with kitchen paper. Slice the garlic.
Lightly brown the garlic in a non-stick skillet with the two teaspoons of oil, then add the shrimp to the pan.
Sauté the shrimp for about 10 minutes, turning them often, and halfway through cooking squeeze the juice of half a lemon directly over the shrimp.
At the end of cooking transfer the shrimp to a serving plate and garnish with chopped fresh parsley and a few lemon wedges made from the remaining half.

Storage
You can prepare the shrimp in advance and then reheat them when needed. Cooking them is so quick that I still recommend making them fresh at the time.
