Persimmon and Cocoa Pudding

Making the persimmon and cocoa pudding is very simple! I must first thank Sabrina, a dear reader of mine, who introduced me to the recipe for this dessert last year. It is indeed not new; it was just me who didn’t know about it. But it’s found online with many names: persicacao, chocopersi, persiciok

The recipe is indeed very simple, no cooking, you need only 2 ingredients, a ripe persimmon and some cocoa, a blender, and the pudding is ready! Additionally, it is suitable for those following a vegan diet and also for those who prefer raw food. I don’t particularly prefer it because I love cooking too much, but sometimes it’s convenient not having to turn on the stove, right?

Ingredients

  • 1 persimmon (ripe and soft)
  • 1 tsp unsweetened cocoa
  • 2 puddings = 1/2 WW point
  • 1 pudding = 0 WW points

Tools

  • Hand blender
  • Molds
  • Molds

Steps

  • Wash, clean, and peel the persimmon. Cut it into small pieces.

  • Place the persimmon pieces in the blender’s jar and add the unsweetened cocoa.

  • Blend very well. The persimmon tends to set quickly, so you can either enjoy it immediately as a cream or pour it immediately into two small molds. I tried both a silicone and a metal one: both work great. Leave in the fridge for an hour and then unmold.

Update: for some of my readers, an hour was not enough, and it required a whole day. It might depend on the variety of persimmon used. So it will set, but maybe you’ll need to wait longer.

  • And here is our persimmon and cocoa pudding ready to be unmolded and enjoyed. I decorated it with some almond flakes, which should obviously be counted separately.

  • Here is a photo of the inside of the pudding. One shouldn’t expect a smooth consistency; the persimmon remains slightly grainy, but the taste is delicious and very chocolaty. I really liked it. If desired, a sweetener can be added, but I believe it would mask the fruit’s flavor. In short, a simple dessert with zero WW points!

    Enjoy!
