With autumn approaching, nothing beats a soft and fragrant apple cake that fills the house with that sweet, enveloping aroma. Today I present my version, different from the usual: with little flour and lots of soft apples inside, juicy and sweet, especially if you use organic apples. Every year, at this time, I make it at least a couple of times, as it is the perfect dessert for breakfast or a snack, perhaps to enjoy with a warm afternoon tea, indulging a bit between slices.

- 1 lemon
- 1 cup cup all-purpose flour

- 1/2 cup cup sugar

- 1 1/2 packet baking powder

Preparation
To prepare the apple cake, start by juicing a lemon and pouring the juice into a large bowl. Take the apples, preferably yellow and not too ripe, or if you have green ones even better. Peel them, remove the core, and cut them into wedges about half an inch thick, then place them in the bowl with the lemon juice. Mix well so that all the wedges are covered with the juice, preventing them from browning.
In another bowl, put the flour together with the sugar and eggs. Work with the mixer until you get a homogeneous mixture, then add the baking powder and mix well. In a small saucepan over very low heat, melt the butter and add it to the mixture, stirring until you get a semi-liquid batter. Add the apples with the lemon juice and stir gently with a spoon to evenly distribute the fruit in the batter.
Take a round pan about 8-9 inches in diameter, butter and flour it, then pour in the mixture. Bake in a preheated oven at 350°F for about 40 minutes.
After the time has passed, remove and let cool. You can enjoy the cake as is or sprinkle it with a little powdered sugar.
Tips and Storage
You can add a teaspoon of cinnamon to the batter for a slight hint of flavor.
The apple cake keeps at room temperature, covered, for about 3 days.
