This is my favorite recipe for preparing baked chicken. By following this procedure, the meat will be tender and juicy when cooked. Even the breast, which is usually the least favored part, will be a real treat for the palate.

- 1 chicken (whole, with skin)
- 1 sprig rosemary
- 4 leaves sage
- 1 leaf bay leaf
- to taste mixed peppercorns
- 2 tsp salt
- 4 tbsps extra virgin olive oil

To cook the baked chicken, start by preparing a mix of aromatic herbs. Chop the sage leaves, bay leaf, and rosemary needles with a knife, scissors, or a chopper. Put them in a bowl, add 2 teaspoons of salt, and a grind of mixed pepper. Mix everything well.
Note: this amount is suitable for a chicken weighing 2-2.2 lbs.
Now take the cleaned chicken, tie it so that it doesn’t open or deform during cooking. Then take a teaspoon of the herb mix and sprinkle it inside the chicken.Now brush the chicken with olive oil on all sides. Then take the leftover herb mix and sprinkle it on both the oiled surfaces of the chicken.
Transfer the chicken to a baking dish with the breast side up.
Cover with a sheet of aluminum foil, or if you have it, use the baking dish lid. Bake at 356°F, preheated oven, for 40 minutes. After the time is up, open the oven and remove the cover from the baking dish. Take a couple of tablespoons of the cooking liquid and pour it over the chicken, then let it cook uncovered for another 10-15 minutes. You can use the grill in the last 5 minutes of cooking to brown the chicken further.
Prepare a side of oven-roasted potatoes in a separate pan, and serve them with the chicken.
