Baked Chickpea Patties

Baked chickpea patties are a burst of vegetarian flavor, perfect as a main course or as a single dish paired with a fresh salad. Soft inside and slightly crispy outside, they can be enjoyed hot or cold — ideal to prepare in advance and perfect for a picnic or lunch on the go.

Ingredients

  • 3 cups cooked (boiled) chickpeas (about 17.6 oz / 1.1 lb)
  • 2 eggs
  • 1 1/2 onion
  • salt
  • black pepper
  • 1 bunch parsley (chopped)
  • 6 tablespoons breadcrumbs
  • extra virgin olive oil

Preparation

  • Drain the chickpeas and reserve the cooking water, which you will use later. Transfer the chickpeas to a deep bowl.
    Sauté the onion, then add it to the chickpeas and blend everything with an immersion blender. While blending, add a ladle or two of the cooking water (aquafaba), a pinch of salt and some black pepper, until you obtain a semi-dense mixture that can be handled with your hands.
    Add the eggs and the chopped parsley, mixing well to combine the ingredients.
    Scoop a couple of tablespoons of the mixture and form patties. You can leave them round or slightly flatten them for more even cooking.
    Roll the patties in the breadcrumbs and place them on a baking sheet lined with parchment paper. Drizzle with a little olive oil and bake in a preheated oven at 392°F for about 20 minutes, or until golden.
    Serve hot or cold, according to your preference.

Tips and storage

The patties can also be prepared the day before, making them great for meal prep.

If you prefer the fried version, make smaller patties to ensure even cooking.
