Banana bread

Banana bread is a classic U.S. cake: soft and moist, made with mashed ripe bananas. As with every classic recipe, mine has a personal touch: a sweet bread enriched with fiber thanks to a mix of cereals and dried fruit. Perfect for breakfast, it will win your palate from the first bite!

Ingredients

  • 2 eggs
  • 90 1/2 cup packed brown sugar
  • 3 bananas (ripe)
  • 240 2 cups all-purpose flour
  • 50 3 1/2 tbsp vegetable oil (neutral seed oil)
  • 1 1/2 sachet (≈4 tsp) baking powder for cakes
  • 1 1/2 teaspoon ground cinnamon
  • 30 1 oz dark chocolate chips
  • 20 3/4 oz sliced almonds
  • 20 3/4 oz walnuts (chopped)
  • 30 1/3 cup rolled oats
  • 20 3/4 oz puffed millet (puffed)

Preparation

  • In a bowl, break the eggs, add the sugar and beat everything with an electric mixer until you obtain a frothy mixture.
    Add the oil and the cinnamon, then incorporate the sifted flour and baking powder, continuing to mix with the mixer.
    In a separate bowl, mash the bananas into pieces with a fork until you obtain a purée. Add it to the batter and mix again with the mixer.
    In a cup, combine the dark chocolate chips, the coarsely chopped nuts, the rolled oats and the puffed millet to make a mix. Add two-thirds of this mix to the batter and keep the remainder for the final decoration. Mix well to incorporate the ingredients.
    Butter and flour a loaf pan, pour in the batter and level it with a spatula. Sprinkle the remaining mix of nuts and cereals on top.
    Bake in a preheated static oven at 356°F on the middle rack for 35-40 minutes. Check the cooking with a skewer: it should come out dry; if not, continue baking for a few more minutes.
    Remove from the oven and let cool completely before unmolding the banana bread. Serve in slices and enjoy!

Tips and storage

You can create the mix of dried fruit and cereals as you like, for example with hazelnuts or cashews, puffed rice, and so on.

Banana bread keeps covered for up to 4 days.
