The turkey osso buco is a cut of meat that is often underrated. I myself am not fond of it, except when I prepare braised osso buco with this grandmother’s recipe. The only variation in this recipe is that she used homemade red wine, while I prefer to deglaze with white wine. Preparing it is very easy, and the result will win over all your guests.

- 1 potato
- 3 tablespoons tomato pulp
- 1/2 onion
- 1/2 cup white wine
- extra virgin olive oil

Steps
To prepare the braised turkey osso buco with potatoes, start by pouring a generous drizzle of extra virgin olive oil into a non-stick frying pan. Then place the 4 pieces of osso buco in the pan and brown them on both sides. It will take about 5 minutes. While browning the meat, also add the chopped onion. As soon as the meat turns slightly golden, pour in the white wine and let it evaporate over high heat. Once it has evaporated, season with salt and black pepper, then add the potatoes, peeled and cut into slices slightly more than 1/4 inch thick. Also add the tomato pulp, and cover with a lid. Lower the heat and let cook for 20-30 minutes.
Serve the dish hot, accompanied by the sauce that forms at the bottom of the pan and a nice slice of bread for dipping.
