- 3.5 oz mascarpone
- 1 tablespoon unsweetened cocoa powder
- as needed Smarties
Tools
- Stick for lollipops
Preparation
To prepare the mascarpone cake pops, start by finely crumbling the sponge cake in a bowl.
NB: you can find the cocoa sponge cake recipe here.
Add the mascarpone and a tablespoon of cocoa, then mix until all the ingredients are well combined.
When the mixture is compact and sticky enough, form balls about the size of a walnut.
In this version, they are not dipped in melted chocolate: once the balls are formed, decorate the surface with Smarties. Insert a stick or skewer and place them on a tray.
Let the cake pops rest in the freezer for 10 minutes before consuming them, or in the refrigerator for about 30 minutes.
Tips and storage
You can also use classic sponge cake: in this case, the balls should be skewered, dipped in melted chocolate, and then decorated.
Smarties can be replaced with chopped hazelnuts, pistachios, coconut, colorful sprinkles, sugar decorations, or anything that inspires you at the moment of preparation.
Cake pops can be stored in the refrigerator for 2 days.
