This recipe was born like many good ideas: at the last minute. I had little time, little desire to cook something demanding, but a big appetite. Thus, this cheesy shortcrust pastry roll was born, simple, quick, and surprisingly tasty. Ingredients for the roll
- 1 roll shortcrust pastry
- 4.2 oz mozzarella
- 5.3 oz chicken breast (aia aequilibrium or other cold cuts to taste)
Preparation of the shortcrust pastry roll
Preparing the filled shortcrust pastry roll is really simple and quick. To begin, take the shortcrust pastry out of the fridge and let it sit at room temperature for a few minutes: this will make it easier to unroll without breaking (the same applies to puff pastry!).
Roll it out keeping the provided parchment paper, then lightly prick the surface with a fork. Evenly distribute the slices of smoked chicken breast, then slice the mozzarella into not-too-thick slices. Let them drain for a few minutes on a small plate to prevent releasing too much water during cooking, and place them over the chicken.
At this point, gently roll up the shortcrust pastry onto itself, using the parchment paper, being careful not to break it.
For a golden and shiny surface, you can brush the roll with a little milk or beaten egg before baking.
Transfer the roll onto a baking sheet lined with parchment paper, and bake at 428°F for 15 minutes in a preheated oven. Depending on the oven, it might take a couple of minutes more to cook.
Once baked, let it cool slightly and serve your cheesy shortcrust pastry roll… delicious both warm and at room temperature!

Tips
You can easily customize this recipe by replacing the chicken breast with any other sliced cold cut you prefer, such as ham, salami, or turkey. The same goes for mozzarella: try other stretchy cheeses, like scamorza, provolone, or caciocavallo. In short, get creative with the flavors and create the combination you like best!
