In our house, the most appreciated meat is chicken, and every time we get creative in preparing it in different ways like when we made chicken with corn flakes, really delicious. This time we opted for a classic recipe: chicken in tomato sauce. A simple dish, but so tasty that in the end, you can’t help but mop up the sauce.

Ingredients
- 2.2 lbs chicken drumsticks (or chicken pieces)
- 24.7 oz tomato sauce
- 1 cup water
- 1/2 onion
- 4 leaves basil
- 1 tbsp extra virgin olive oil
- salt
- black pepper

Steps
To prepare the chicken in tomato sauce, I used chicken drumsticks, but you can also use whole thighs, just wings, or a whole chicken cut into pieces. The only precaution is to leave the skin attached to make the dish even more flavorful and, above all, so it won’t stick during cooking.
Start by taking a non-stick pan with high edges that also has a lid of the same size. Add a generous tablespoon of oil, and place the chicken pieces in the pan. Brown on several sides for about ten minutes. Peel and chop half an onion, then add it to the pan. As soon as this also starts to brown, add the tomato sauce. Add about a cup of water, and season everything with salt and black pepper.
Cover with the lid and bring to a boil. At this point, lower the heat and cook for 40 minutes, occasionally flipping the chicken and checking that the sauce does not dry out too much.
A couple of minutes before turning off the heat, add 4 leaves of fresh basil, and let it infuse. If necessary, adjust the salt again.As soon as the chicken is ready, serve hot.
