Ingredients

- 1 1/3 cups all-purpose flour
- 1 espresso cup coffee
- 1/3 cup sugar
- 1 egg
- 2 tbsps sunflower oil
- 2 tbsps unsweetened cocoa powder
- 1 tsp baking powder

Steps
To prepare the coffee cookies, first make an espresso cup of coffee and let it cool, or even better, let it cool to room temperature.
In a bowl, combine all the dry ingredients, then add all the liquids and the egg. Mix with a spoon until everything is combined. The mixture should be homogeneous, soft, and sticky. Cover with plastic wrap and let rest in the fridge for 40 minutes. Once the time has passed, the dough will become more compact and easier to work with.Take a small amount of dough and form it into small logs or balls, and place them on a baking tray lined with parchment paper. Flatten them slightly on the surface.
Once all the cookies are prepared, bake them in a preheated static oven at 356°F for about 12 minutes. Remove from the oven and let them cool before consuming.
Storage
Coffee cookies can be stored in a cookie jar for about 8 days. For proper storage, it’s preferable to use tin or glass jars with airtight closures.
