Country Style Gnocchi

Country style gnocchi is a first course that immediately captivates: tasty, easy, and quick to prepare. It’s one of my favorites, perfect for winter days when you crave something to warm your heart, but I also love to enjoy it during the warmer seasons. The combination of sage and rosemary gives a unique and enveloping aroma, a taste so special it becomes irresistible.

Ingredients

  • 14 oz potato gnocchi
  • 9 oz canned borlotti beans (or boiled)
  • 2 oz bacon (local aged)
  • 10 oz tomato pulp
  • 1/2 onion (medium)
  • 4 leaves sage (fresh)
  • 1 teaspoon rosemary (needles)
  • salt
  • pepper
  • extra virgin olive oil
  • 1/2 cup water

Preparation of Country Style Gnocchi

  • To prepare the flavored country style gnocchi, start by taking a pot not too large and add the local aged bacon cut into cubes. Turn on the heat to high, and as soon as the bacon starts releasing its fat, add the chopped onion and let it brown for a couple of minutes.
    Add the beans along with the cooking water (or broth), stir and let it warm for about a minute. Add the tomato pulp, adjust with salt and pepper, and add a drizzle of extra virgin olive oil. Stir, bring to a boil, then lower the heat, cover with a lid and let cook for 5 minutes.
    Thin with half a cup of water, add the chopped sage and a teaspoon of chopped rosemary. Bring to a boil again and let cook for another 5 minutes.
    In the meantime, cook the gnocchi in boiling salted water until they float to the surface (about 2 minutes from boiling). Drain them and add them to the sauce, stirring gently. Serve immediately, very hot.
