Crêpes – Basic recipe for sweet or savory crêpes

Crêpes, or crespelle, have ancient origins dating back to the Roman era, not France as often thought. Today, they are a true staple of Italian cuisine, used from north to south in endless preparations. Perfect for savory recipes, but also irresistible in a sweet version: pairing with Nutella is undoubtedly the most loved.
This recipe provides the quantities for 4 crêpes, easily adjustable by increasing the amounts.

Ingredients

  • 5/8 cup milk
  • 2/3 cup all-purpose flour
  • 1 egg
  • 1 pinch salt
  • butter (a knob)
  • 2 tsp sugar

Preparation

  • To prepare the crêpes, place the sifted flour with a pinch of salt in a bowl. In another bowl, break the egg and beat it with a whisk, then add the milk and mix. Pour the liquid mixture slowly into the bowl with the flour, stirring continuously with the whisk until you get a smooth, lump-free batter.
    For the sweet version, also add 10 g of sugar.
    Heat a 9.5-inch (24 cm) diameter pan (or a special crêpe pan) over medium heat and lightly grease it with butter. Pour a ladle of batter into the pan and rotate it in a circular motion to distribute the batter evenly to the edges. Cook for a few seconds: the crêpe is ready to be flipped when it easily detaches by shaking the pan. Flip it with a spatula or a quick wrist motion and cook the other side for a few seconds.
    As they are ready, place them on a plate and fill or serve them as you like.

Tips

You can flavor sweet crêpes by adding a pinch of cinnamon to the batter.
