The donuts are the famous American ring-shaped doughnuts, made popular worldwide also by movies and TV series. How many times have you seen police officers at the station with a box full of glazed doughnuts?
I chose to coat them with melted chocolate because in my home the classic glaze isn’t very appreciated. But you can really let your imagination run wild with decorations: colored glaze, chocolate, sprinkles and anything that comes to mind. The important thing is to start from a good basic dough, soft and aromatic.

Ingredients for 6 donuts
- 1 cup Manitoba flour
- 1 cup all-purpose flour
- 1 egg
- 1/2 cup milk (lukewarm)
- 2 tbsp + 1 tsp granulated sugar
- 2 1/2 tbsp butter (softened)
- 2 tsp fresh yeast
- 1 pinch salt
- 1.5 oz dark chocolate
- 1/2 oz white chocolate chips
- as needed sunflower oil
Preparation
To prepare the donuts, start by taking the butter out of the refrigerator at least half an hour in advance. Cut it into pieces and let it soften at room temperature.
Put the two flours, the sugar and the crumbled yeast into the bowl of a stand mixer. Fit the dough hook and start the mixer on low speed.
While the dough begins to work, pour the lukewarm milk in a thin stream and let it knead for a few seconds. Then add the egg and a pinch of salt and continue working the dough for about a minute, until it starts to pull away from the sides of the bowl.
Then add the soft butter a little at a time, letting the mixer work at medium speed for about 10 minutes, until you obtain a smooth, homogeneous dough.
Turn off the mixer, detach the dough from the hook and shape it into a ball with your hands. Transfer it to a bowl, cover with a kitchen towel and let it rise for about 2 hours in a warm place (for example in the turned-off oven with the light on), until it doubles in volume.
After the rising time, transfer the dough to a lightly floured work surface and roll it out with a rolling pin to a thickness of about 3/8 inch.
Use a round cutter with a diameter of about 2 3/4–3 1/8 inches to cut out rounds of dough. Then, using a bottle cap or a small cutter, make a hole in the center of each round to obtain the classic doughnut shape.
Place the doughnuts on a lightly floured tray or on parchment paper, cover with a kitchen towel and let them rise again for another 30–40 minutes.
Heat plenty of sunflower oil in a deep-sided pan or a small saucepan. When the oil is hot, fry the doughnuts one or two at a time, turning them on both sides until they are golden brown.
Drain them on paper towels and let them cool before decorating.While the doughnuts are cooling, melt the chocolate in a bain-marie. When they are completely cold, dip one side of each doughnut into the melted chocolate. Then decorate them as you like with white chocolate chips.
Alternatively, you can pour the chocolate over the doughnuts instead of dipping them (as shown in the photo). Or you can decorate them with glaze and colored sprinkles, leaving room for your creativity.
Tips
It is recommended to consume the donuts on the same day.
You can flavor the dough by adding a few drops of vanilla extract to the mixture.
