- 3 tbsps butter (at room temperature)
- 1/4 cup grated Parmesan cheese

Steps
To make duchess potatoes, start by boiling the potatoes. Place them unpeeled in a pot with cold water. Put the pot on high heat and bring to a boil. After about 30 minutes from boiling, the potatoes should be tender enough to be easily pierced with a fork. Then drain them and rinse under cold water. Now proceed by peeling the potatoes and mashing them with a potato ricer. Alternatively, you can use a food mill.
Transfer the mashed potatoes to a bowl, add the diced butter, grated cheese, and egg.
Season with a good pinch of salt and mix everything with a whisk until you get a homogeneous mixture. Transfer the mixture to a piping bag with a 16 mm star tip.
Squeeze walnut-sized mounds onto a baking sheet lined with parchment paper and bake in a preheated fan oven at 356°F (180°C) for 15-20 minutes, until golden brown.Serve the duchess potatoes immediately after baking.
