The glass dessert with Baileys cream is my creation, designed to make Valentine’s Day special. Single servings layered with soft sponge cake and velvety Baileys Irish Cream, perfect for ending the dinner sweetly with your partner.

Ingredients
- 2 egg yolks
- 1.5 oz Baileys (Irish cream)
- 1.25 cups milk
- 2.5 tbsps all-purpose flour
- 2.5 tbsps cornstarch (maizena)
- 3.5 tbsps sugar
- sponge cake
- coffee
- unsweetened cocoa powder
Preparation
To prepare the glass dessert with Baileys, start with the cream. In a non-stick saucepan, place the eggs with the sugar and Baileys, then mix with a whisk. Add the cornstarch and flour, incorporating them well, and slowly pour in the milk while continuing to stir. Place the saucepan on medium heat and bring to a boil, stirring continuously. Once boiling, give it a final vigorous stir and remove from heat. Let cool. Meanwhile, prepare a generous cup of coffee, and lightly sweeten.
Now proceed to assemble the glass. Place a layer of cream, followed by a layer of sponge cake previously brushed with coffee. Continue with this sequence until the glass is filled. Finally, dust with some unsweetened cocoa and serve.
Tips and Storage
To give the dessert a pleasant crunchy touch, you can add chocolate flakes or hazelnut crumbs.
If you prefer, you can replace the sponge cake with ladyfingers, Pavesini, or why not, some leftover pandoro from the holidays.
The dessert can also be prepared the day before: store it in the refrigerator and consume within 2 days.
