The muffins with maple syrup and cinnamon are a fit version of the classic Anglo-Saxon treats. We used a zero-calorie maple syrup and replaced sugar with powdered stevia, transforming them from ultra-caloric muffins to light yet flavorful muffins.
Consider that a classic muffin provides about 300 kcal, while these zero-calorie maple syrup muffins have only 140 kcal per serving.
They are perfect for a snack, but also great for breakfast or as a mid-day snack.

Ingredients
- 1 2/3 cups all-purpose flour
- 2 eggs
- 2 1/3 tbsp maple syrup (zero cal)
- 1/4 cup milk
- 0.7 oz stevia
- 1 1/2 tsp baking powder
- to taste ground cinnamon
Preparation
To prepare the muffins with maple syrup and cinnamon, start by placing the stevia and eggs in a bowl. Mix with a whisk, then add the milk and blend well.
Gradually incorporate the sifted flour, mixing until you achieve a thick and smooth batter. At this point, add the maple syrup, baking powder, and a pinch of cinnamon. Continue working the mixture for a few more minutes until it is homogeneous.
Take a muffin pan, place paper cups, and fill them about 3/4 full with the help of a spoon.
Bake in a preheated static oven at 356°F (180°C) for about 15 minutes.
Once baked, let them cool, and if desired, sprinkle with a little powdered sugar before serving.
Tips and Storage
If you don’t want to use stevia and prefer regular sugar, use 45 grams.
These muffins can be stored for 2 days.
