Egg-free, flour-free, and milk-free. It may sound strange, but these oat cookies with apples and raisins are a real delight. Light and full of flavor thanks to the fruit present in them.

Ingredients
- 3/4 cup oat flour
- 1/2 cup rolled oats
- 1 cup apples (already cleaned)
- 2 tbsps brown sugar
- 1/3 cup raisins
- 2 tbsps lemon juice
- 2 tbsps sunflower oil
- 1 packet vanillin
- 4 tbsps water
- 1 tsp baking powder
Steps
To prepare these delicious oat cookies, start by cleaning the apples, getting about 200g of fruit and chopping it into small cubes. Set aside 50g, to which you should add the lemon juice. With the remaining 150g, prepare a puree. Then place the apple in a small pot with the sugar and water. Cook slowly, stirring often for about 5 minutes. Once the apple is soft, turn off the heat and let it cool for two minutes. After the time, blend with an immersion blender or regular blender. Now proceed to make the cookies. In a bowl, pour the oat flour, rolled oats, apple puree, diced apple, sunflower oil, baking powder, vanillin, and raisins.
Note: Before using the raisins, check the package to see if they need soaking.
Mix all the ingredients well with a spoon. You should get a sticky mixture.
Now take a baking tray and line it with parchment paper and start forming the cookies. Take a spoonful of dough and place it on the tray using a second spoon to help. Press slightly in the center, trying to form a uniform disc.
Repeat until the dough is finished, obtaining about 12 cookies.
Bake in a preheated oven at 392°F for 15 minutes. After the time, make a gap in the oven door, possibly using some pot holders or a wooden spoon, and let cook for another 5/8 minutes.
Remove from the oven and let cool completely on the tray before moving them elsewhere.
Consume within 2 days of production.
