Pasta with Bell Pepper and Cream Cheese Sauce

When in summer peppers are abundant in the garden, you have to get creative to make different recipes so it doesn’t feel like you’re eating the same thing every day. Here I propose Pasta with bell pepper and cream cheese sauce. A simple and tasty recipe that combines the sweetness of the peppers with the creaminess of the cream cheese.

Ingredients

  • 1 red bell pepper
  • 1 green bell pepper
  • 1/2 onion
  • 1 oz cream cheese (Philadelphia)
  • salt
  • extra virgin olive oil
  • 6 oz pasta

Steps

  • To prepare pasta with bell pepper and cream cheese sauce, start by chopping half an onion and set it aside. Wash and clean the two peppers by removing the stem, seeds, and any white membranes. Then cut them into pieces about 0.5 inches.

    In a pan, pour a generous drizzle of extra virgin olive oil and bring it to the heat. Add the onion and peppers and sauté for a couple of minutes over medium-high heat. Add a pinch of salt, stir, and cover with a lid. Cook over low heat for 10 minutes, stirring occasionally to prevent the ingredients from burning.

  • Meanwhile, cook the pasta in plenty of salted water according to the cooking times indicated on the package.

    Once the peppers are cooked, take about 3/4 of them and transfer them to a blender, leaving a nice spoonful in the pan. Then blend until you get a cream.

  • Now pour the cream obtained into the pan where a spoonful of chopped peppers remains and add the cream cheese. Turn the heat back to low and stir to melt the cheese. Extend with a ladle of pasta cooking water, and stir. Once a homogeneous consistency is obtained, turn off the heat.

    Once the pasta is ready, drain it and pour it into the pan. Stir everything and serve at the table.

Notes

If you don’t like or don’t have cream cheese at home, you can also replace it with cooking cream, classic or plant-based, or with mascarpone. Same quantities.

Even with the peppers, you can use them of a single color, use yellow peppers.. in short, it’s important that they are good peppers.
