Plumcake with Plums

I had several plums to use up this year, as our trees produced quite a few, so I decided to make this plumcake by revisiting an old recipe that was given to me a while ago.

Ingredients

  • 8.5 tbsp butter (at room temperature)
  • 0.7 cup sugar
  • 1 packet vanillin
  • 1 pinch ground cinnamon (optional)
  • 4 eggs
  • 1 pinch salt
  • 1.6 cup all-purpose flour
  • 1 tsp baking powder
  • 8.8 oz red plums (pitted)

Steps

  • To prepare the plumcake, start by removing the pits from the plums and cutting them into 4 parts or smaller pieces if you prefer. Let them rest in a bowl.

    Meanwhile, in a bowl, beat the butter with the sugar and vanillin until creamy. Then add the eggs, salt, and a pinch of cinnamon if desired, and work the mixture.

    Now add the flour little by little while continuing to work with the mixer, and finally add the baking powder. Work until a homogeneous mixture is obtained.

    Lastly, pour in the pieces of plums along with the juice they released. Mix everything with a spoon.

    Take a 10-inch loaf pan, butter and flour it, or if you prefer, line it with parchment paper. Then pour the mixture inside, level it, and bake in a preheated oven at 350°F for 50-55 minutes.
