Zucchini are abundant and you don’t know what to cook anymore? Here’s an easy and quick recipe: the savory zucchini pie. It’s tasty, versatile, and perfect for both lunch and dinner.
For a few years now, I’ve discovered the goodness (and convenience!) of savory pies, and this summer I tried this zucchini version for the first time: truly impossible to stop eating once you taste it!

Ingredients for the zucchini pie
- 1 sheet puff pastry
- 1 zucchini (medium-sized)
- 2 eggs
- 1 tbsp Grana Padano DOP
- 3 slices of processed cheese (optional)
- to taste salt

Preparation of the zucchini pie
Start by preparing the zucchinis, which are the stars of this savory pie. Cut them in half lengthwise and remove any seeds if present, as they can be unpleasant. Then slice them thinly and place them in a bowl with a generous pinch of salt: this will help to draw out excess water and prevent the pastry from becoming soggy during baking. Let them sit for at least 15 minutes.
Meanwhile, in a deep dish, beat the eggs with the grated cheese and a pinch of salt.
Roll out the puff pastry sheet in a baking dish – rectangular or round, depending on the shape you’ve chosen – and lightly prick the bottom with a fork. At this point, gently squeeze the zucchinis to remove the released water, then spread them evenly over the pastry base.
Level with the help of a fork and pour over the egg and cheese mixture. Finally, if you like, you can add some sliced processed cheese cut into strips, as I did: it will make the whole thing even more stringy and tasty!Bake at 392°F in a static oven for 15-20 minutes.
Tips
For an extra touch of flavor, you can enrich the savory pie with cooked ham, speck, bacon, or sausage: they pair perfectly with zucchini.
Instead of processed cheese slices, you can use pizza mozzarella or another stretchy cheese of your choice. You’ll get an even creamier and tastier filling!
