To celebrate the arrival of spring, I created these spring cookies. Simple shortbread cookies, decorated with your choice of jam that evokes a spring theme.
Needless to say, they turned out so good that they didn’t last until the next day.

Ingredients
- 1 cup all-purpose flour
- 5 tbsps butter
- 1 egg
- 3 tbsps sugar
- 1 sachet vanilla powder
- as needed jam (flavor of your choice)
Steps
To prepare the spring cookies, start by pouring the sifted flour, diced butter, sugar, egg, and vanilla sachet into a bowl. Mix everything by kneading vigorously with your hands. Alternatively, you can use the stand mixer with a K-hook. Combine all the ingredients in a bowl and knead, either by hand or with a stand mixer using a paddle.
Work until you get a smooth, homogeneous dough. At this point, cover with plastic wrap and let it rest in the fridge for 20 minutes.
After this time, dust a work surface with flour and roll out the dough to a thickness of about 3/8 inch. Cut the cookies with the cutters you prefer.
Using your fingers or the thick handle of a spoon, create flower shapes. Insert the jam of your choice, and with the remaining dough, create a small ball and place it in the center of the flower.
Bake at 356°F for 10/12 minutes.
Let them cool completely before consuming them.
Stored in a glass or tin jar, they keep for 8/10 days.
