- 4 slices turkey thigh
- 1 blood orange (juice + grated zest)
- as needed semolina flour
- 3.4 fl oz white wine

To prepare the Sicilian Blood Orange Turkey Thigh, start by dredging the turkey slices in semolina flour. In a pan, heat a generous amount of extra virgin olive oil, then lightly brown the slices on both sides and season with a pinch of salt. Once browned, add half a cup of white wine (3.4 fl oz) and let it evaporate. Meanwhile, juice a blood orange, and when the alcoholic smell of the wine has evaporated, pour the obtained juice over the slices. Cover with a lid and cook for 7 minutes on low heat, turning the slices halfway through cooking. After the time has elapsed, turn off the heat and garnish the slices with grated orange zest.

Variations
If you can’t find turkey thigh slices, you can alternatively use turkey breast slices, following the same procedure and cooking times. Obviously, the flavor will be slightly different, but still delicious.
