Vanilla and Cocoa Muffins with Chocolate Chips

Muffins are irresistible small treats, perfect for a snack or to take with you for a delicious break outside the house. Born in the Anglo-Saxon tradition, they are now loved everywhere thanks to their versatility. Among the many versions, my favorites remain the classic apple ones and the cocoa ones with chocolate chips, soft and fragrant, which are the stars of the recipe you’ll find below.

Ingredients

  • 3/4 cup butter
  • 3 1/4 cups flour
  • 3 eggs
  • 1 cup sugar
  • 1 packet baking powder
  • 1 pinch salt
  • vanilla flavor
  • 1 1/8 cup milk (+ 1 1/2 tbsp)
  • 1/4 cup unsweetened cocoa powder
  • 1/3 cup dark chocolate chips

Preparation

  • To prepare the muffins, start by melting the butter in a saucepan or in the microwave.
    In a bowl, pour in the sugar and eggs and beat them with a whisk or mixer until you get a light and well-blended mixture. Add the melted butter and mix, then incorporate the sifted flour.
    Now add a pinch of salt and slowly pour in the milk, continuing to stir slowly. Finally, add the baking powder and work the mixture until you get a semi-liquid and homogeneous batter.
    Divide the batter into two equal parts.
    To one, add the vanilla and, if you like, the chocolate chips, stirring with a spoon to distribute them evenly.
    To the other, add the sifted cocoa along with 1 1/2 tbsp of milk; you can also add chocolate chips. Stir until you get a homogeneous mixture.
    Place the paper baking cups in a muffin pan and fill them about 2/3 with the batter. Let them rest for a minute on a flat surface so that the surface levels out, then proceed with baking.
    Bake in a preheated static oven at 350°F for 15–20 minutes. Always do the toothpick test before taking them out to ensure they are perfectly cooked.

Tips and Storage

The muffins should be consumed completely cold to best savor their taste.
In the vanilla version, you can replace the dark chocolate chips with white chocolate chips.
They keep covered for 3-4 days.
