The air fryer stuffed tomatoes are a fresh and light single course, filled with rice and cooked on a bed of potatoes, making them the perfect dish for summer. I’ve suggested many air fryer recipes, and for me, these stuffed tomatoes are one of the best. Like the air fryer tiella or the air fryer zucchini parmigiana, this recipe is also perfect in the summer, when tomatoes are nice, firm, sweet, and flavorful. For this recipe, I decided to make the Roman-style stuffed tomatoes, and at the end of the recipe, you’ll also find the air fryer Calabrian-style stuffed tomatoes version. In 20 minutes, the stuffed tomatoes cook perfectly in the air fryer, with the great advantage of halving the cooking times compared to the original oven recipe, and there’s no need to use the oven with its preheating.

Ingredients for making stuffed tomatoes
- 2 potatoes (medium)
- 4 vine tomatoes (firm, ripe, about 5 oz each)
- 1/2 cup Arborio rice
- 1/3 cup Pecorino Romano cheese (grated)
- 1 clove garlic
- 6 leaves basil
- 2 pinches dried oregano
- 3 pinches salt
- 3 tablespoons extra virgin olive oil
Tools needed for the recipe
- 1 Air Fryer
- 1 Baking tray to fit inside the basket
- 1 Blender
- 1 Bowl
Procedure
Wash the tomatoes well, avoiding detaching the stalks. Cut the caps, set them aside, and then, with a small knife, make cuts in the pulp, avoiding puncturing the tomatoes. Then, with a spoon, scoop out the pulp, letting it fall into a blender, along with all their juice.
In the blender, also combine the garlic clove, basil leaves, a pinch of salt, 1 tablespoon of oil, and oregano. Blend everything well and then pour it into a bowl, setting aside a few tablespoons, which will be used to season the potatoes. Add the rice and mix well.
To ensure the rice cooks well, it needs to be rehydrated. You can let it rest in the blended pulp for an hour, or you can place the bowl in the microwave and run it for 6 minutes at 600 watts. Let it rest for 10 minutes, then season with the grated Pecorino cheese, mix, and fill the tomatoes no more than 3/4 full.
Peel and cut the potatoes into wedges, distribute them in the baking tray, and add the reserved tomato pulp, rice if any is left, a pinch of salt, and mix. Arrange the tomatoes on top and then cover each stuffed tomato with its cap. Season with a pinch of salt and the oil.
Place the baking tray with tomatoes and potatoes in the air fryer and start the first cooking for 10 minutes at 356°F. Afterward, remove the tomatoes, stir the potatoes at the bottom, and reposition the tomatoes on top, without the caps, so they won’t burn from the heat above. Continue cooking for another 10 minutes at 356°F.
Serve the rice-stuffed tomatoes on a bed of potatoes, placing the caps on top.

The air fryer stuffed tomatoes can be enjoyed hot, warm, or even at room temperature. You can store them in the refrigerator for up to 2 days in an airtight glass container.
Calabrian-style stuffed tomatoes in the air fryer
Instead of rice, you can fill the tomatoes with 2 oz of seasoned breadcrumbs, mixed with diced provolone and cooked ham.
Stuffed tomatoes without potatoes in the air fryer
You can cook the stuffed tomatoes in the air fryer, placed directly in the fryer basket. Cook at 356°F for 10 minutes, then remove the caps and continue cooking for another 7 minutes.
