Air Fryer Zucchini Sticks

The air fryer zucchini sticks are gluten-free, breadcrumb-free, and wheat flour-free, staying crispy and truly delightful. After suggesting the air fryer zucchini parmigiana, the air fryer zucchini flans and the air fryer zucchini pie, today I want to offer something less elaborate. Perfect to serve as an appetizer or aperitif, these air fryer zucchini are excellent accompanied by a Greek sauce. Over the years, I have proposed many air fryer recipes, and creating the book Air Fryer (Gribaudo) taught me, so I learned to use the air fryer even to make baked pasta and cakes.

Ingredients

  • 2 zucchini (medium)
  • 1 tablespoon whole grain rice flour
  • 1 oz oz Parmigiano Reggiano DOP
  • one-third teaspoon smoked paprika
  • 1 clove garlic (small)
  • extra virgin olive oil (spray)
  • 2 pinches salt

Tools Needed to Cook Zucchini in the Air Fryer

  • 1 Air Fryer
  • 1 Bowl
  • 1 Grater with large holes

Procedure

  • Wash and trim the zucchini, cut them in half, and then into sticks about 0.4 inches wide. Place the sticks in the bowl and spray them with oil. Mix well, then season with paprika, flour, finely chopped garlic clove, and grated cheese. Mix again until the ingredients are well combined.

  • Place the floured zucchini sticks in the air fryer basket, avoiding overlapping. Cook for 8 minutes at 392°F, and in the meantime, prepare the yogurt sauce. If preferred, you can choose to make the kebab yogurt sauce. After 8 minutes, flip the zucchini sticks and continue cooking for another 2 minutes.

  • Place the still-hot sticks on a serving plate and accompany them with yogurt sauce.

    The leftover air fryer zucchini sticks are excellent for filling sandwiches, spread with yogurt sauce, place the zucchini on top, and enrich with slices of ham or crumbled feta.

Extra Tips from Rosella
