Baby Octopus in Jar Cooking

The baby octopus in jar cooking in the microwave, like almost all my jar cooking recipes, cook in a few minutes and keep for 15 days. As with the recipe for jar-cooked baby octopus with potatoes, this recipe should be adapted if using fresh or frozen octopuses, everything is explained in the recipe. Ingredients for making stewed baby octopus

  • 6.3 oz baby octopus (small octopuses or cleaned small squid)
  • 1 cup cherry tomatoes
  • 1 tsp tomato paste
  • Half clove garlic
  • 1 bunch parsley
  • 1 tbsp extra virgin olive oil
  • 1 tbsp white wine
  • Half chili pepper (optional)
  • 1 pinch salt

What you need to make small squid in jar cooking

  • 1 Microwave
  • 1 Jar 500 ml with thin or thick gasket*

Procedure

  • Wash and cut the cherry tomatoes in half, wash and chop the parsley, peel and also chop the garlic clove. Distribute everything in the jar and add the baby octopuses. Salt, add the chili pepper, tomato paste, wine, and oil. Clean the rim of the jar, close, and clip.

  • Place the jar in the microwave and start cooking at reduced power for 10 minutes, for me at 440 watts. This process will allow the meat to tenderize. At the end of cooking, let the jar rest closed for at least an hour or until consumption.

    Alternatively, you can cook for 6 minutes at tested power and let the jar rest closed for 2 hours. Then, restart cooking for another 2 minutes, always at tested power. The double cooking in the jar for octopus and similar makes them very tender.

  • In this case, let the baby octopuses or small squid defrost, and then proceed as per the recipe. Finally, cook for 6 minutes at tested power, in my case 600 watts.

  • When the jar is at room temperature, you can store it in the refrigerator for 15 days. Obviously, it is meant closed and vacuum-sealed, because this is what guarantees its preservation.
