After cooking Broccoli in the microwave, the Trio of broccoli in jar cooking and the Stewed Broccoli in jar cooking I couldn’t not prepare a soup with this vegetable which I love very much because I find it very versatile!
And so I created a variant of my Cannellini Bean and Spinach Soup in jar cooking in which I replaced the cannellini beans with borlotti beans, but you can use whatever beans you prefer!

Ingredients
- 10.5 oz broccoli
- 8.5 oz canned borlotti beans
- 2/3 cup vegetable broth
- 1.5 oz chopped vegetable mix (for soffritto)
- 1 tbsp tomato paste
- chili pepper
- extra virgin olive oil
What you need to cook bean and broccoli soup in jar cooking
- 1 Jar 1 liter with thin gasket
- 1 Microwave
How to prepare bean and broccoli soup in jar cooking in the microwave
Clean the broccoli and divide them into florets.
Wash the broccoli florets under running water and let them drain.
Prepare the Vegetable Broth in jar cooking.
Distribute the broccoli florets inside the liter jar.
Add the precooked beans, broth, chopped vegetables, and tomato paste.
Clean the jar edges, place the lid with the gasket and close with the 4 clips as per Instructions for jar cooking in the microwave.
Cook in the microwave at your tested power (I use 600 W) for 12 minutes.
After the cooking time, remove the jar from the oven, being careful, and let it rest in a warm place for 1 hour. In this way, your bean and broccoli soup in jar cooking will continue to cook at low temperature.
When you want to consume it, you just need to unclip the clips and put it back in the microwave for 5 minutes at the same power you used to cook it.
Remove the soup, season with extra virgin olive oil and chili pepper to taste, and serve hot.
