How to make Cannellini Bean and Escarole Soup in Jar Cooking

  • Peel the garlic clove and chop it, also chop the chili pepper and distribute them in the small bowl, add the oil and brown in the microwave for 1 minute at 750 watts. In the meantime, wash, drain, and coarsely chop the escarole.

  • Distribute the browned mixture, beans and part of their liquid, escarole, salt, pepper, and water in the jar. Mix the contents, clean the rim of the jar, close it, and secure it.

  • Set the microwave to your tested power (the water test is explained HERE), for me 750 watts, insert the jar and start cooking for 8 minutes. At the end, let the closed jar rest for 20 minutes. During this time, the recipe will finish cooking and the vacuum will form. Once at room temperature, you can store it in the refrigerator or open it, as per procedure, and enjoy.

Extra tips for making the soup in jar cooking

Alternatively to the garlic and chili pepper mixture, you can add, directly into the jar, 2 scant tablespoons of aromatic oil in jar cooking.
