Cooking beef roast with an instant pot is easy and allows you not to monitor the cooking. The meat remains tender, and while the pork roast with instant pot is cooked without adding anything else, in this case, I wanted to propose a complete dish suitable for festive days, adding potatoes, like the stew in the electric pressure cooker. As I explain in the guide to instant pots, instant pot is a registered trademark belonging to a specific company, the correct name is multicooker (English), while in Italian it is programmable multifunction pot. Hence, I could have called this recipe Beef roast in a multicooker. Not to be confused with the electric pressure cooker, which has only the pressure cooking function.
To cook the beef roast with potatoes in the instant pot, we will use both the oven (or fry) function and the pressure function. At the end of the recipe, you will also find how to cook the beef roast in a slow cooker (low temperature), cooking roasts with a lot of connective tissue at low temperature will make the meat very tender.

Ingredients for making the roast with potatoes in the instant pot
- 1.5 lbs beef (chuck or top blade)
- 3.5 oz frozen mixed vegetables (for sautéing with carrot, celery, onion)
- 1 broth cube (vegetable or beef*)
- 1.7 oz water
- 3.4 oz white wine
- 5 tbsps extra virgin olive oil
- 1 bunch aromatic herbs (sage, thyme, rosemary, bay leaf)
- 3 pinches salt
- 2 pinches pepper
- 2.2 lbs red potatoes (new)
What you need
- 1 multicooker
- 1 Bowl
- Paper towel
- Kitchen twine
How to make the roast in the multicooker
Distribute the chopped vegetables in the pot, add the oil and brown at 390°F for 3-4 minutes.
Meanwhile, pat the piece of meat with the paper towel, tie it with kitchen twine, and then rub it with 2 pinches of salt and the pepper.
Insert the meat into the instant pot and increase the temperature to 410°F, brown the meat on both sides for a couple of minutes, turning it. Moisten the meat with the wine and let it evaporate for 4 minutes. Remember that when the pot is without its lid, it doesn’t start the countdown, so you will have to check the time or follow common sense as you would with a pot on the stove.
Tie the washed aromatic herbs with twine and add them to the roast, add the broth cube, the water, and close the pot with its lid.
Reprogram the multicooker with the high-pressure function (at 248°F) for 30 minutes and start cooking.
Meanwhile, wash the potatoes. If you bought new potatoes, leave half of them with the peel, they will be more beautiful to bring to the table and tastier. Immerse the potatoes in cold water in the bowl until the roast is finished cooking.
Once the first cooking of the roast is finished, depressurize the pot by lifting the valve. Remove the lid, drain the potatoes and add them to the roast. Salt, stir to flavor, and then close the pot again. Start cooking the potatoes for 12 minutes with the pressure function of the instant pot, choosing, if possible, the low mode at 230°F. At the end of cooking, let the pot depressurize naturally.
Serve your beef roast accompanied with potatoes and its cooking juices.
Tips for cooking meat with an instant pot
Cooking with multicookers offers numerous advantages, including the ability to change temperatures, from low-temperature to fry function.
*Instead of the broth cube, you can use 2.4 oz of beef broth in an electric pressure cooker or multicooker.
Beef Roast in Slow Cooker
If you want to cook the beef roast in the multicooker at low temperature, after browning and deglazing the meat, cook with the simmer function at 194°F or with the slow cooker function on high, for 5-6 hours.
Roast without Potatoes in Instant Pot
If you prefer, you can cook only the roast with the pressure function for 40 minutes.
