Ingredients
- 8 oz canned cannellini beans
- cup water
- 3.5 oz spinach
- 5 cherry tomatoes
- 1 onion (small)
- 1 clove garlic
- 1 chili pepper (small)
- cumin
- paprika
- salt
- extra virgin olive oil
What is needed to cook the cannellini soup in jar-cooking
- 1 Microwave oven
- 1 Jar 1 liter with a thin seal
How to prepare the cannellini bean and spinach soup
Peel and finely chop the onion, garlic clove, and chili pepper.
Place them in a bowl with a drizzle of extra virgin olive oil and sauté in the microwave at maximum power for one minute.
Transfer the sautéed onion in its oil into a 1-liter jar.
Add the washed and dried fresh spinach, the cannellini beans rinsed from their preservation water, and the cherry tomatoes cut in half.
Season the ingredients with salt, paprika, and cumin.
Add the water.
Clean the jar edges with a cloth or a paper towel.
Close the jar with its lid, seal, and four clips as described in the Instructions for microwave jar-cooking.
Cook in the microwave at your tested power for 11 minutes.
Once cooked, let it rest for at least 20 minutes.
Then remove the clips, gently pull the seal, and serve the soup with a drizzle of extra virgin olive oil and some croutons.
