Chickpea and zucchini balls in air fryer, another one of my Air Fryer Recipes, vegetarian, or rather, vegan in this case, because I didn’t even use eggs but a legume mix as an egg substitute.
I have a series of Vegan jar cooking Recipes, because I’ve decided to embrace this lifestyle much more, even though I still consume some vegetarian food. However, I find that consuming more legumes is not only more sustainable but also more economical, which is never a bad thing in these times!

Serve the chickpea and zucchini balls with a Yogurt Sauce, using this recipe but substituting the cow yogurt with soy yogurt.

- 16 oz zucchini
- 18 oz cooked chickpeas
- 3 tbsp legume mix (egg substitute)
- 1 clove garlic
- 1 tbsp nutritional yeast
- extra virgin olive oil
- salt
- paprika
- breadcrumbs
- chopped parsley
What You Need to Cook Chickpea and Zucchini Balls

How to Prepare Chickpea and Zucchini Balls in Air Fryer
Wash the zucchini and trim the ends.
Grate the zucchini using a large-hole grater.
Gather the grated zucchini in a bowl and add a little salt.
Place the chickpeas in the blender with paprika and two tablespoons of extra virgin olive oil.
Add the grated zucchini.
Blend the ingredients until they form a smooth cream.
Pour the mixture into a bowl.
Add the nutritional yeast and legume mix and mix.
With damp or slightly oiled hands, shape the chickpea and zucchini balls.
Place the breadcrumbs and chopped parsley on a plate.
Coat all the balls in the breading.
Arrange the chickpea and zucchini nuggets in the air fryer basket and spray them with a little oil.
Cook the balls at 356°F (180°C) for 15 minutes. Then turn the balls and finish cooking at 374°F (190°C) for 2 minutes.
Remove the balls and serve them hot.
