Jokes aside, I have to say, this recipe surprised me, not only in taste but especially because I managed to achieve a gentle cooking, while perfectly cooking the chicken in a jar. Like the recipe for milk chicken in jar cooking and curry chicken in jar cooking, this recipe will also give you a chicken in sauce that pairs well with pilaf rice in jar cooking. The ingredients that will make this recipe special are: chicken breast, coconut milk, English curry, onion, and cornstarch. The cornstarch will make the coconut milk creamy and bind it perfectly to the chicken. It will be impossible to resist!

What You Need to Make Coconut Chicken in a Jar

- 2 Jars 500 ml with thin seal
- 1 Cutting Board
- 1 Knife
- 1 Teaspoon
How to Make Coconut Milk Chicken in Jar Cooking
Chop the onion and distribute it in 2 jars, add 10 g (0.35 oz) of butter per jar, and place them together in the microwave. Sauté for 3 minutes at the microwave’s highest power. Meanwhile, place the chicken breast on the cutting board and cut it into large cubes*.
Distribute the chicken in the jars, mix it very well, and sauté each jar for 2 minutes at the highest power*. Remove one jar from the microwave and, while the second one is sautéing, add a teaspoon of cornstarch, one of curry, a pinch of salt, and 100 ml (3.4 oz) of coconut milk. Mix the chicken very well, clean the edges, close, and latch.
Cook the coconut chicken for 6 minutes at half power (I use 350 watts) and, in the meantime, prepare the other jar.
Once cooking is done, let the closed jars of coconut chicken rest for 20 minutes. Once at room temperature, you can store the coconut chicken in jar cooking in the refrigerator, where it will keep for 10 days, thanks to the vacuum.
Rosella’s Tips…
To prevent the content from splattering in the microwave during sautéing, place a sheet of paper towel or a splatter guard on the jars. Cutting the chicken into fairly large pieces will result in soft meat.
Remember to mark the expiration date on the jars you store in the refrigerator. You can use labels or a permanent marker.
