Cod in olive oil confit in jar cooking is a truly exquisite main course, which cooks in just 10 minutes. This recipe is also called cod pil pil and involves cooking at a low temperature in oil. Contrary to what you might think, the cod in olive oil confit does not absorb the oil it cooks in, remaining tender and very tasty.

How to Make Cod in Olive Oil Confit in Jar Cooking
Pat the piece of cod dry with paper towels, if necessary, cut it into two pieces to fit it at the bottom of the jar. Wash, dry, and chop the parsley, peel the garlic clove and cut it in half, wash the chili pepper and dry it.
Pour a little oil on the bottom of the jar, place the fish fillets, compacting them well so that there is no air between the pieces and season with the parsley, chili pepper, and garlic. Cover to the brim with oil. Clean the rim of the jar, close, and secure it.
Set the microwave to a quarter of the tested power (I use 160 watts), insert the jar and start cooking for 10 minutes. At the end of cooking, let the closed jar rest for at least 20 minutes*. Once at room temperature, you can store the jar in the fridge.
To open the jar of cod in oil, release the seal, place the jar in the microwave, and start with the defrost function until the oil is hot. It will take about 4-5 minutes.
Rosella’s Tips for Olive Oil Confit in Jar Cooking in the Microwave
Cod in olive oil confit in jar cooking can be stored for 15 days in the fridge, immersed in the cooking oil and without breaking the seal. Once opened, it keeps for 2-3 days.
I recommend consuming the cod at least 24 hours after cooking, it will be tastier.
The cooking times are calculated using ingredients at room temperature and not cold from the fridge.

How to Serve Cod Pil Pil in Jar Cooking
Cod Petals with Roasted Pumpkin, Crunchy Pumpkin Flower Petals: Slice the pumpkin, place it on the oven tray, season to taste, brush with oil, and bake at 392°F for 15-20 minutes. In the last 5 minutes, add the opened pumpkin flowers and continue until golden. Arrange the pumpkin slices on a plate, alternating with the pumpkin flowers and flaked cod. Emulsify a little cooking oil from the cod with grated ginger or lemon zest, season the ingredients.

Cod Mille-feuille with Saffron Potatoes and Broccoli
Peel and slice 2 potatoes, cook them for about 10 minutes in boiling water flavored with salt and saffron. Drain them and, in the same water, cook broccoli florets for 10 minutes. Crush some black olives. Arrange the cod in petals on the plate, alternating with potato slices and broccoli florets. Season with olives and a little cooking oil from the cod.

Sandwich with Cod, Lamb’s Lettuce, and Pumpkin
Toast 3 slices of whole wheat sandwich bread, dress two slices with a little cooking oil from the cod, cod pieces, cooked pumpkin slices, and lamb’s lettuce. Add a little chopped hazelnuts and assemble the sandwich.
Tips for a Tastier Cod in Olive Oil Confit in a Jar
Before cooking, for a more intense flavor, let the fish rest in the seasoning for 10 minutes. If desired, you can season with: lemon thyme, oregano, and/or grated lemon zest.
Cod in olive oil confit (or confit cooking) can be stored, immersed in oil, for 15 days in the fridge, even without vacuum sealing, because oil is a natural preservative.
You can reuse the oil for other fish-based cooking or seasoning; just let it solidify in the fridge, the impurities will separate from the oil, and you can scoop them out with a spoon.
I omitted salt in this recipe: cod is already savory and jar cooking enhances the flavor.
Following the same procedure, you can use other types of fish, such as tuna, mackerel, soaked stockfish, and all types of fish with slightly dry flesh.
