You know well that over the years I have refined the microwave jar cooking technique, making all those necessary improvements to make the most of jar cooking. After tasting the curry chicken and Greek yogurt cooked in a pan, I wanted to try making curry chicken in a jar and I can say it has nothing to envy the original curry chicken recipe. Creamy and tasty, like the coconut chicken in jar cooking or like the milk chicken in jar cooking.

Shopping list for curry chicken in a jar

  • 14 oz chicken breast
  • Half leek (or 2 scallions)
  • 2 tbsp extra virgin olive oil
  • 2 tsp curry powder (leveled)
  • 2 pinches salt
  • 2 tbsp 2% Greek yogurt

What you need for jar cooking

  • 1 Microwave
  • 2 Jars 500 ml with thin seal
  • 1 Bowl

How to make curry chicken in a jar?

  • Peel the leek, or scallions, slice it, wash it, and drain it well. Distribute it in the glass bowl, or microwave tray, and season it with the two tablespoons of oil and a pinch of salt. Sauté the scallion in the microwave for 2 minutes at about 750 watts.

  • Meanwhile, cut the chicken breast into regular pieces, removing any fat and cartilage.

    Distribute the sautéed leek in the two jars, do the same with the chicken and season each jar with a teaspoon of curry and a pinch of salt. Mix the contents with a spoon, clean the edges, close and lock. Set the microwave to your tested power (I use 600 watts), insert a jar and start cooking for 5 minutes. At the end of cooking, let the closed jar rest for 20 minutes and, in the meantime, cook the other jar of curry chicken.

  • Once it is at room temperature, you can store the vacuum-sealed curry chicken in the refrigerator, it will keep for 15 days.

    When you want to serve it, unlock, put the jar in the microwave and start for 2 minutes with the defrost function, to acclimate the glass, then proceed at your power, for about 3 minutes. Open the jar and add a nice spoonful of Greek yogurt, mix well and, if desired, heat for 2 minutes at half the tested power, I use 300 watts.

  • The curry chicken in jar cooking is ready to be served and maybe accompanied by some pilaf rice in jar cooking or some naan bread.
