Like the curry chicken in jar cooking, this recipe also pairs well with pilaf rice in jar cooking. A few days ago, my friend Silvia came to visit me, fresh from a dinner at a restaurant, and told me about this delicious curry salmon and gave me the idea to propose it cooked in a jar. So, we immediately went out shopping, I bought the salmon and carrots; back home I picked two zucchinis from my garden, my small jar of curry, an onion, a lemon and we immediately started testing the recipe. As often happens, I go by intuition, surprising my friend every time I predict the cooking times. In the evening, we dined together and, again, we were stunned by the goodness.

Shopping List for the Jar Cooking Salmon with Vegetables Recipe
- 2 slices salmon (about 3.5 oz each)
- 1 white onion
- 3 carrots
- 2 zucchinis (medium-small)
- Half teaspoon curry
- Half lemon (zest)
- 1 tablespoon extra virgin olive oil
- 0.35 oz butter
- 2 pinches salt
What You Need to Cook Curry Salmon in Jar Cooking in the Microwave
- 1 Jar with thin seal, 1 liter
- 1 Grater
- 1 Cutting Board
- 1 Knife
How to Make Salmon with Vegetables in Jar Cooking?
Peel the onion and slice it, trim the washed carrots and zucchinis and cut them into rounds. Distribute the vegetables in the jar, season them with oil and salt, mix them and close the jar with the glass lid only (without the seal and clips). Place the jar in the microwave and let them wilt for 4 minutes at tested power, I used 750 watts.
In the meantime, place the salmon fillets on the cutting board and season them with lemon zest and two pinches of curry.
Remove the vegetable jar from the microwave and, carefully, take off the lid. Add the remaining curry, mix them, and place the two salmon fillets. Place the butter, cut into flakes, on top of the fillets, clean the edges of the jar, close it, and clip shut.
Place the jar in the microwave, set it to your tested power, for 6 minutes, and start cooking. Once done, let the jar sit closed for twenty minutes. Using a cloth, shake it gently to blend the flavors.
To serve the salmon, unclip, place the jar in the microwave, setting it at the same power used for cooking, for about 3 minutes. Pull the seal and serve.

The vacuum-packed curry salmon keeps in the refrigerator for a week. If you want to use frozen salmon fillets, let them defrost for 15 minutes on the cutting board before proceeding with cooking.
Ideas for Serving Curry Salmon with Vegetables in Jar Cooking
Prepare a yogurt sauce by mixing 3 tablespoons of Greek yogurt with a pinch of salt, a teaspoon of apple cider vinegar, and one of oil, add some chopped chives and half a finely chopped garlic clove and emulsify everything. Transfer the salmon with vegetables to the plates and serve with yogurt sauce and naan bread.
Salmon with Vegetables in Curry Jar with Rice
You can accompany the salmon with simply boiled and drained Basmati rice. Use the cooking juice from the salmon to dress the rice.
