An ethnic jar-cooked recipe that adds to my collection of jar-cooked sauces and those with coconut milk. This spicy jar-cooked sauce is excellent for seasoning rice, chicken, or any simple recipe to which you want to add creaminess. With the aroma of curry and little else, this curry jar sauce is one of my favorite recipes. To make this sauce even more special, there will be tomato pulp to balance the sweetness of the coconut milk and a touch of chopped almonds.

Ingredients for making coconut milk and curry sauce
- 3/4 cup coconut milk
- 3/4 cup tomato pulp
- 2 tbsp chopped almonds
- Half chili pepper
- 1/3 tsp curry
- 1 pinch ground cinnamon
- 1 pinch ground ginger (or freshly grated ginger)
- 2 saffron threads
- 1 tsp extra virgin olive oil
- 2 pinches salt
- 1 bunch parsley

- 1 Jar 500 ml thin gasket
How to make the spicy jar-cooked sauce
Pour the coconut milk, tomato pulp, and all other ingredients into the jar, finely chopping the parsley.
Mix the sauce well and then clean the jar rim, close, and clip.
Place the curry sauce in the microwave and start cooking for 8 minutes at half power, compared to the tested power (water test). I use 300 watts, tested at 600 watts.
At the end of cooking, let the closed jar rest for at least an hour, so it will continue to cook at low temperature, adding creaminess to the jar-cooked curry sauce recipe.
When the jar is at room temperature, you can store it in the fridge, or you can heat it at half power, pull the seal, and serve the curry sauce.
Additional tips for the oriental jar-cooked sauce
During the post-cooking rest, shake the jar to mix the sauce.
