Curry Tempeh in Jar Cooking

The curry tempeh in microwave jar cooking is a vegan recipe, unlike the curry chicken in jar cooking this recipe is suitable for those who love oriental recipes and want to follow a plant-based diet or, like me, are in a phase of wanting to eliminate meat from their diet. Cooking tempeh in jar cooking is very easy and fast and allows us to keep it ready for 15 days. You can accompany the curry tempeh with pilaf rice in jar cooking, replacing butter with oil, or, as I did, accompany it with 1/2 cup of pre-cooked cannellini beans, microwave-cooked cauliflower and a handful of olives.

The recipe is very simple, cut the tempeh into cubes, put it in a jar with 2 sautéed green onions, coconut cream, and curry. Cook for a few minutes and then let the closed jar rest for 20, as per instructions for cooking in jar.

How to make the jar cooking tempeh recipe

  • Clean the green onions, removing only the base and any blemished parts, trying to use even the green part of the onions. Slice them and distribute them in the small bowl. Season them with a pinch of salt, oil, mix, and sauté for 1 minute in the microwave at about 800 watts.

In the meantime, pat dry and cut the block of tempeh into cubes.

  • Distribute the tempeh cubes in the jar and add the sautéed green onion, curry, coconut milk. Mix well and then clean the rim of the jar. Close it and clip it.

  • Place the jar in the microwave and start cooking for 6 minutes at reduced power, compared to the power given by the water test, I use 440 watts out of 600 tested power.

  • After cooking the curry tempeh, let the closed jar rest for at least 20 minutes or until it is consumed. Once it is at room temperature, you can remove the clips and store it in the fridge.

Rosella Errante’s Tips

The taste of coconut milk in this recipe is not overpowering, but, if you prefer, you can replace it with soy yogurt.

Cooking at reduced power ensures that milk and yogurt do not curdle.
