Dried citrus peels in the microwave is a basic recipe perfect for flavoring all dishes from savory to sweet.

The recipe for dried citrus peels in the microwave is a different way to preserve lemon peels or orange peels so you always have them ready in the pantry!

Ingredients
- 4 lemons (or 3 untreated oranges)
Tools needed to prepare dried citrus peels
- 1 Microwave tray heating
How to prepare dried citrus peels in the microwave
Wash and clean the citrus fruits thoroughly, scrubbing the peel to remove all impurities.
Then, dry the lemons thoroughly, or the oranges if using them.
Using a vegetable peeler or a small knife, remove the outer peels of the citrus fruits, being careful to obtain peels of regular sizes and to avoid the white part, which would be bitter.
Place the citrus peels on the crisp tray for the microwave, ensuring they do not overlap.
Insert into the microwave and cook on microwave plus grill function at maximum power for 2 minutes.
Remove the peels, turn them over, then lower the power and continue cooking, still on the combined microwave plus grill function, for another 3 minutes.
Remove the peels again, stir them and restart at the same power for another 2 minutes.
At the end, remove the peels and let them cool completely at room temperature.
To make the dried citrus powder, transfer the cooled peels into a coffee grinder or a powerful blender, and grind the citrus peels in batches.
Once you have obtained the powder, transfer it into glass jars.
Leave the glass jars open for 24 hours to ensure the peels cool completely and do not create condensation that would spoil the peels themselves.
Use the citrus powder to flavor fish, meat, or poultry dishes.
Or use it to flavor your desserts like custards or cakes and muffins.
If you blend the citrus peels with fine salt, you will create an aromatic salt perfect for seasoning your dishes, allowing you to halve the amount of salt consumed in your dishes!
Storage
You can store dried citrus peels in the microwave, in the pantry, for 4 months.
