Ingredients for making the American apple cake in the microwave
- 4 apples
- 1 tablespoon erythritol (or brown sugar)
- 1 lemon (small)
- 1 pat butter
- 3/4 cup all-purpose flour
- 1 tablespoon inulin (long chain)
- 1/4 cup erythritol
- 1/3 cup milk
- 4 tablespoons sunflower oil
- 1 teaspoon baking powder
- 1 pinch salt
- 1 tablespoon brown sugar
- 3 pinches ground cinnamon
What you need
- 1 Microwave Oven
- 1 Microwave Pan ceramic or oval Pyrex
- 1 Microwave Pan heating material
- 1 Microwave Stand
- 1 Bowl
- 1 Hand Whisk
Procedure
Peel the apples, remove the core, and dice them. Spread them in the heating pan and season with butter, lemon juice, and erythritol (or sugar). Mix them and cook for 10 minutes at maximum power.
Pour the flour, inulin, and sugar into the bowl. Add the salt, baking powder, and mix. Gradually add the liquids, milk and oil, while whisking.
Pour the cooked apples into the dish and level them, pour the mixture over them, trying to distribute it well over all the apples. Sprinkle the surface with sugar and cinnamon. Place the eggless apple cake in the microwave, setting the dish on a stand, and cook for 13 minutes using the microwave + grill combination function, set to the lowest power. If you can’t adjust the power, place the dish directly on the plate.

This cake keeps well for 3-4 days in the fridge, covering the dish with a plastic wrap. I recommend heating it for 2-3 minutes in the microwave before serving, it’s great warm.
