Today I present to you the eggplant parmesan in jar cooking. After the success (accompanied by many of your questions) of the jar-cooked zucchini parmesan and the white zucchini parmesan in jar cooking, I decided to make the jar-cooked eggplant parmesan but in a light version! The jar cooking technique is suitable for those who love to eat well but without overindulging, for those who don’t have time to stay at the stove or who want to try light and tasty recipes. A great solution, jar cooking, for those who work all week and would like to prepare ready-to-serve recipes in advance. If you prefer, you can make the eggplant parmesan in jar cooking in the classic version: you just need to flour and fry the eggplants, adding only tomato sauce, basil, and parmesan. Either way, it will be good, although I find that, thanks to jar cooking, the flavors are enhanced so there’s no need to make the recipe heavier. This recipe dates back to August 2014, but today I present it to you in a restored version.

Many ask me if you can make parmesan without grilling the eggplants. Yes, it can be done; you can slice the eggplants, put them under salt so they lose their water, then squeeze them well and use them to make the parmesan. Clearly, the recipe will be more liquid and less flavorful.
