- 3 heads Belgian endive
- 1 teaspoon butter (or 1 tablespoon of oil)
- 1 orange (juice and zest – untreated)
- 2 pinches black pepper
- 2 pinches salt
What You Need

- 1 Jar 1-liter with thin seal
Preparation
Wash the heads of endive, cut off the woody and stained base, then make 2 cross cuts at the base of the head. This way it will cook evenly. Arrange the heads in the jar and season them with salt, pepper, the juice and zest of the orange, and finally season with butter or oil.
Clean the rim of the jar, close and clamp it. Place it in the microwave and start cooking for 10 minutes at your tested power, I use 600 watts.
At the end of cooking, let the jar rest closed for at least 20 minutes. This way, a vacuum will form, and the endive will finish cooking at a low temperature.
When it is at room temperature, you can store it in the fridge for 15 days.
When serving your Belgian endive in jar cooking, just unclamp, place the jar in the microwave, and start at the same power used for cooking, for about 5 minutes.
